Roasted Red Pepper & Tomato Dip with Feta and Goat Cheese

 

This Roasted Tomato and Red Pepper Dip also has Goat cheese!

Dips aren’t JUST set out for the Holiday Season. Having a dip on hand helps with meals for one, and for easy snacks too.

I posted this recipe during the holiday season of 2020.

I love seeing the variations of the Roasted Tomato and Garlic Soup on social media.

To me, roasted tomatoes preserve the summer garden season. I also LOVE to roast red peppers, and freeze them for the winter for … breads, dips and food boards and for any salads I love to build!

 

 

Make the dip

 
 

Ingredients:

  • 2 cups roasted tomatoes

  • 3 peeled garlic cloves

  • 1 tsp of olive oil, for drizzling

  • 1/2 cup roasted red peppers

  • 1 cup feta cheese

  • 1 tbsp olive oil (this recipe used Spicy Calabrian Olive Oil from The Olive Oil Co. Brantford Ontario.

  • 70 g (about a 1/4 cup) of goat cheese

How To:

Preheat oven to 375F. Put tomatoes and garlic on a cookie sheet, drizzle with 1 tsp olive oil. Bake until wrinkled and popped.

Remove to cool.

Add tomatoes, garlic, red peppers, feta, goat cheese to food processor, along with another tbsp olive oil, if using flavoured oil.

Processed until combined.

 

 

This dip works great with charcuterie and food boards, AND as a sauce for pasta!

Charcuterie boards, or food platters, are so easy and pretty to set out when planning get togethers in the summer, or for Christmas celebrations.

With Holiday Season (and Eating Season) rapidly approaching, I decided to roast those cherry tomatoes with red peppers, garlic and blend in 2 kinds of cheese: goat and feta. I finished it off with a splash of herbed olive oil from the Olive Oil Company in Brantford Ontario.

If you don’t have an Olive Oil Company near you, season with fresh herbs!

This is more than a dip.

It can play a role as a veggie dip, and as a delicious a pasta sauce. I even see a pizza, spread with this sauce/dip sprinkled with fresh herbs.

This recipe incorporates some much needed vegetables in a season of cheese balls and cocktails!

Some or our menopause digestive systems need a gentle boost of cooked fiber to keep us from being constipated, from all that cheese.

While this recipe does contain two cheeses, the added roasted peppers and tomatoes give it a lighter lift.

Lighten up on the cheese, or try sour cream. Replace the cheese with a dairy free alternative, or omit the peppers and add more tomatoes. There’s always room for fresh garlic, too!
